Animals that are fed a natural diet and particularly heritage breeds, grow slower than factory farmed livestock. When fed a natural diet animals may take as much as twice the amount of time to reach butcher weight. This creates for a much more intense flavor, usually with much less fat.

Grass fed meats should be prepared differently than those you find in the grocery store. To get the full flavor and best end product, most should be cooked slower and at a lower temperature. We recommend using recipes designed for these types of meats. Many of the traditional recipes from "grandmoms" cookbooks and european cooking are ideal for meats raised naturally.
